One quick entry before I try to import everything to the new site. I don’t know why I get so nervous. Isn’t if funny how unfamiliar things are so scary?
Oh, and BTW I looked back at my Happy Easter post and I have to apologize. BORING right? Ugh. I better step up my game. How am I going to do that? Well…… with a brand new camera! (Thanks Andrew for not getting mad at me.) It’s charging right now. Can’t wait for the debut.
Here’s a few pictures from yesterday. After we made some banana bread (for our Strollerwise friends), we cleaned, went to Strollerwise and then to Costco (pretty much a weekly trip these days. I’ll fill you in on our must-haves from Costco later). We all sported our new STUFT Fitness shirts.
Didn’t get chance to get on the treadmill until after the boys were in bed. I have to motivate myself by watching TV. I LOVE The Biggest Loser, so I look forward to watching it while on the treadmill. Somehow it makes the late night run fun. (Bob is my secret boyfriend- he just doesn’t know it yet.)
Dinner last night was actually “brinner” (breakfast for dinner). I was just craving something sweet. Banana chocolate chip muffin (that I made in the morning) and a peanut butter, marshmallow, chocolate chip protein wrap cooked in my handy dandy sandwich maker (the coolest thing ever!). I’ll put the actually recipe on here when I can take pictures with my new camera. It was DELICIOUS!

Phew. What a LONG day. Photo session at home, church, lunch at my parents’ house, home for a couple hours, dinner at Andrew’s mom’s, and then home to do laundry, clean up the house, and write this. Loved every minute of it. Lots of time with family and friends. Yay! This post is going to be short. I’m too tired to be exciting. Here’s a few pictures.
At lunch I tried to get my boys to wear these cool glasses from Mom.
That didn’t work too well so we tried this instead.
I might get in a little trouble for posting this one. Oops. After I tortured the boys (all three) with the glasses and finding Easter eggs, it was time for golf.
A lot of eating today. I actually just polished off my annual Cadbury Egg (thanks Mom). Yes, I only had one, but I also had 2 Hershey’s Special Dark miniatures with it (and I had a plate of dessert earlier in the day).
Here was our lunch feast. That’s my corn dish in the center. It was a big hit.
I promised everyone I would post the recipe. I actually made a joke when we were leaving that I would be posting it at 11:30 tonight and hey, look at that, here I am at 11:10 posting it. He he.
This recipe is a variation from my friend Anne. She was talking about it at Strollerwise class on a cold morning and it sounded fabulous. I subbed in some low fat ingredients and it is amazing. Quick and easy to prepare and it goes well with a lot of different main dishes.
- 4 cans of corn
- 1 8 oz. package of reduced fat cream cheese (softened)
- 1/4 teaspoon garlic salt
- 1/4 cup 1% milk
- 1 large can diced green chilies
- 2 tablespoons Smart Balance Light
Mix all ingredients together and bake at 350 for 30 minutes.
I LOVE spicy food so I’ve also tried it with some fresh sliced jalapenos and a little ground cayenne pepper. Yum yum yum!
Had to indulge in some dessert after lunch. Easter isn’t complete without a little chocolate. Do you see the size of that strawberry?
The rest of the day was great. Dinner with Andrew’s family is always amazing and so much fun. I am sooooo lucky to be part of such a great family. I didn’t take any pictures though. I was too tired by then. I’d be more motivated too if I had a good camera. I’ll keep working to convince Andrew that I “need” one. Ha! This blog would be so much better with really good pictures.

I lost steam after the last post. Just had a little pick me up of a glass of wine and 2 of these delicious low fat cookies and now I’m ready to post the recipe. I made these yesterday afternoon. I wanted something fun and festive for Easter to take to my boot campers this morning. It would’ve been a little counter productive to give them fatty cookies after our workout, so I made a lighter version of a recipe that was on an email from Parents.com. These just looked so cute and I could tell my boys really wanted to help me make them. Keep in mind these are low fat so the consistency is not like a normal sugar cookie, but they are moist and taste like cake batter and they passed the husband test (not all of my low fat creations do).
Cake Mix Cookies
- 1 package yellow cake mix
- 1/3 cup egg substitute
- 1 teaspoon canola oil
- 1/4 cup almond milk +1/2 teaspoon of lemon juice (in place of buttermilk)- combine and let sit for 5-7 minutes
- 1/4 cup applesauce
- canned vanilla frosting
Combine cake mix, egg substitute, oil, almond milk and lemon juice, and applesauce. Beat with an electric mixer until smooth. Cover and refrigerate for 1-2 hours ( I put it in the freezer for about 45 minutes instead because I didn’t have that much time- story of my life).
Spoon chilled batter onto cookie sheets lined with parchment paper. Top each with sprinkles and bake for 8-10 minutes on 350. Let cool for awhile before transferring them to wire rack. They are a little sticky, but move better once they’ve cooled.
Frost the bottom half of the cookies and top with remaining cookies. Yum!
Okay, seriously, time for bed. Tomorrow is Easter!!!!! Wait, it’s 12:30. TODAY is Easter!
I remember when I was teaching full-time I looked forward to Fridays so much. Things are so different now as a mom. There’s never really a “weekend”. I really think the weekends are actually busier than the rest of the week. What night of the week should I really be looking forward to? Hmm…. every night?
I need to be a “Debbie Downer” for a just a little bit. Went for a run this morning by myself (the only days I can escape because Andrew is off work). I do really look forward to Fridays for this reason. But today my running shorts were pretty darn tight. Ugh. I haven’t stepped on the scale for awhile. Okay, wait, that’s a lie. (Maybe I shouldn’t be writing this while drinking a glass of wine.) Anyway…I’ve managed to gain some weight the past couple of months (stopping breast-feeding, finishing marathon training, etc.). It just doesn’t feel good. I weigh more now that I did 2 weeks after giving birth to my twins (I was back at my pre-pregnancy weight. I guess that’s what happens when you have 2 little ones sucking the fat off you). Anyway, I’ve been eating for 3 people for the past 2 years (and let me tell you, it has been AWESOME), but now it’s a little hard adjusting to just eating for one. I know I’ll get back to my happy weight, but it’s always a challenge to stay positive and be conscious of all your food choices.
I have a goal weight I’m working towards (not ready to share that with the public though). I’m not in a big hurry, I know if I keep my goal in mind I’ll get there, but it’s tough sometimes. Okay, just had to get that out there. I promised myself that I would share everything on this blog, so I just had to open that door. Now on to better things………………..
The rest of Friday was a great day (after my run in my tight shorts- grrrr). I got to spend a little more time in the kitchen than usual. Sooooo….. breakfast was…
Amazing Straw nana Cereal Cake
(This is the “before” picture. I didn’t take an “after” picture because by the time it was done I was too hungry to think about taking pictures.)
I can’t take all the credit. I revised a recipe I found on Healthy Tipping Point.
Here you go. Get ready to enjoy some warm, fruity, gooey goodness.
- 3/4 cup crushed cereal ( I’ve used Puffin Puffs Fruit Medley and Kashi Honey Sunshine- Puffin Puffs Fruit Medley is ROCKS in this!)
- 1 banana (sliced)
- 3-4 strawberries (sliced)
- 1/4 cup almond milk ( 4 tablespoons separated)
- cinnamon (to taste)
- 1 splenda packet
- 2-3 tablespoons of multigrain pancake mix (Trader Joe’s has the best one EVER)
Combine 2 tablespoons of almond milk, pancake mix, cinnamon and splenda. Then add the sliced banana and strawberries. Make sure all the fruit pieces are covered with the pancake mix. Place the mixture in a ramekin.
Combine the crushed cereal and the other 2 tablespoons of the almond milk. Put on top of fruit mixture in ramekin. Cover with foil and bake at 400 for 25 minutes. Uncover and broil for about 3 minutes.
Right now I’m wondering if I’m really ready for this? I’m so not a “blogger”. I’m not very computer savvy. I get bored easily and have a pile of magazines that haven’t been touched. My house is a mess. My pregnancy scrapbook is sitting untouched since I gave birth to my boys (yes, yes, I know they’re almost 16 months old). Pictures from Christmas FINALLY just made it on my computer. Ugh. Adding one more thing to my list doesn’t really sound like the smartest idea anymore. But, my whole purpose of this blog is to document my journey towards finding the balance. I just need to keep focused on the goal.
Here’s a little update on how the weekend went down. I know you all want to catch up. That’s funny (since no one even knows that this blog exists yet).
Saturday was nuts. I taught my boot camp class in the morning and then off to the YMCA to teach my other classes. Then to La Jolla (not a fun drive by the way) to pick up my race packet. Felt a little guilty for buying myself some $20 sunglasses, but they made me really happy the next morning during the race when I could actually see instead of staring at fogged up lenses.
We all went to a BBQ Saturday night. It’s so hard to enjoy myself while chasing my boys all over the place making sure they don’t get into anything that they shouldn’t. I lost focus for a minute and a guy was yelling at me from across the yard to tell me that Joaquin was eating sidewalk chalk. Nice. Earlier in the week I was putting the new “big boy” car seats in the car and a woman in her van yelled down at me to ask if that was my baby in the street. What the? Not good. Joaquin must have seriously booked it up the hill to get up there so fast. Man, oh man, never a dull moment. Mother of the year award goes to…….
Anyway…. La Jolla Half was great. The weather was great. I got a little ambitious at the beginning of the race, and then about mile 9 a ran out of gas a bit. I’m blaming it on the fact that I was up until 1:00 am Friday trying to get this blog started. 1:43:21. Not my best, but that’s okay. Love, love, love that I had my boys and my amazing parents at the finish line waiting for me.
The rest of the day was filled with the boys and I cleaning, doing laundry, baking low-fat red velvet cookies (don’t worry- the recipe will be on here soon), more laundry, and another BBQ.
It’s weird not having an upcoming race in the next month or so. I’m already feeling a little restless. I’m going to make this blog my new “training”. Instead of training for a race I’m figuring out how to be a blogger. Ha! Good luck Kristin. You should probably just stick to running.
Time for bed. I need to rest (physically and mentally). I’m going to attempt to sleep in tomorrow. I tried this morning, but was up on the treadmill at 6 am. Problems.
My first post. I’m officially embarking on this new journey into the blog world. To be honest, I’m actually a little nervous writing my first post as this whole blogging thing seems so foreign. I’m still not to sure how I’m going to find time to blog as I struggle on a daily basis to even make a dent in my “to do” list. Oh well, we’ll see what happens. This blog is something I’m really passionate about doing, so I’m taking the plunge. I’ve been so excited the past few weeks with everything I want to share and write about: fun ideas, recipes, food finds, running experiences, fitness tips, etc. Oh, I can hardly contain myself. (Deep breath Kristin. Baby steps. One thing at a time.)
Okay, now for a little about me. I’m a 34 year old mother of twin boys. They’re almost 16 months now. The past year and a half has been a whirlwind. I went from being a full-time PE teacher by day and a fitness instructor by night, to being a mom, starting my own fitness business, and running my first marathon (I’ve been a runner for awhile, but this was my first full marathon). My days now are filled with mom duties, teaching classes, running (which reminds me, I really should be sleeping and resting for my race Sunday instead of sitting at the computer at 1:00 am- oops), and last, but not least, experimenting in the kitchen. Every morning I thank God for my AMAZING husband who has been working his butt off at his full-time job (and his multiple side jobs) to let me stay home with my precious babies.
I’ve been a fanatic about healthy food and fitness for as long as I can remember. When I was in middle school I would make my friends do aerobics with me in my parents’ garage (I would lead of course- I was always a sucker for attention). Then I’d bring everyone inside and try to cook some big concoction. Hmm.… now that I think about it, I guess not much as changed. I still make people work out with me (and yes, I still love attention) and I still come up with pretty crazy creations in the kitchen on a regular basis.
My purpose in this blog is to document my journey to find balance in life (with eating, exercise, being the wife, mother, and friend I should be, etc.). I feel that because God has truly blessed me with so much, it’s my job to put everything out there (the good and the bad) for the world to read.
This is my platform to share my love of healthy food (including some pretty awesome things I can’t live without), recipes, fitness and exercise tips, and my races. It wouldn’t be complete though without opening up about my favorite thing- just being a mom.
